 As with the D200 and D300, the D500 will take almost any Nikkor lens except the intrusive (which would wreck the mirror) and the pre AI (which would wreck the aperture mechanism).

There is provision for manual selection of non CPU lenses via a Nnon CPU lens list or to input the focal length and maximum aperture on an ad-hoc basis.
