Just click inside the grey quoted text box and select text to delete.
There is a little problem if you are familiar with UBB codes and want to put responses in the quote! See above
OR select the bit of the post you want to quote and copy it to the clipboard, select the insert quote button on the toolbar which opens a grey box and just paste your quote in there - it won't say who said it but I am sure you can just type that as part of your reply as below said by Robert....
Sometimes when a long post is quoted, the opening sentence or the final line is all that is required, sometime not even that.
