Interesting reading this as I use f5.6 to f8 for my wildlife shots.
I suspect there are many situations when the critters are big enough or distant enough to give sufficient dof at wider apertures. It's really only an issue using the 500+1.4xtc at close range.
720mm focused at 5m and f11 means just 30mm dof.
