Either camera would be ok for the majority of those subjects.

The 5300 might give an advantage for low down macro work. (eg. fungi) with its swivel screen. Of course you would need a macro lens for true macro. The 60mm macro might be worth considering as it also sort of doubles for the 50mm prime.

Personally I would get the 18-105 which gives you a wider range for general use and is a better lens than the 18-55. Similarly I would get the 70-300, which is an FX lens so you will get a 1.5x multiplier effect giving an 105-450mm range! This is much better for wildlife. Despite it VR ability, a tripod may be necessary when shooting at the 300mm end.
